Creamy Tortellini Soup
1/2 lb. sausage
1 small white onion
1 15 oz. can diced tomatoes
1 C. diced zucchini
1 32 oz. Box beef broth
1 small can tomato paste
1 handful baby spinach
1 9 oz. pkg, cheese filled tortellini
1 C. heavy cream
In a soup pot, cook the sausage and onions together. Add the veggies and tortellini. Cook for about 15 minutes on a low simmer.
Add the cream. Heat through. Serve with parmesan cheese.
