Tonight’s salad did not disappoint. The grilled chicken marinade was so flavorful. I’ll be using this recipe so much this coming summer!
Grilled Sesame Chicken Salad
3 T. Olive oil
1/4 C. Rice vinegar
2 T. Hoisin sauce
1 tsp. Soy sauce
2 tsp. Sesame oil
1/2 tsp. Ground ginger
Butterfly 2 chicken breasts. Add to a gallon sized ziplock bag. Pour 1/4 cup of the marinade over the chicken and let rest in the fridge for 3-4 hours.
For the salad;
Slice thin 1 head of cabbage.
Grate 2 carrots with a cheese grater
Drain 1 can mandarin oranges
1 C. Almonds (I used sugar glazed)
2 tsp. Sesame seeds
Toss together the salad ingredients. Pour the remaining dressing over the salad.
Grill the chicken and slice thin. Top the salad with the chicken.
Serve with cheese won tons.
